DB Tree -> CC Object -> Property = Colors

Is there any way to change this property from Scalar Field to RGB for many objects in one command either in the GUI or commandline?

It is time consuming to change each object individually :)

You can toggle color with 'C' and scalar fields with 'S' (see the equivalent 'Edit > Toggle (recursive)' menu options).

And with the command line you can't really change that as it's just display options (and they are only retained if you save the entities to BIN files)
