When you compute de distance between clouds you get the signed scale with a curve on its side. I wanted to be sure about what it refers to. I assume it shows the concentration of the points on the scale? If yes is it a simple [n°point/part of the scale] or is there some other equations applied to it like an average or else?

The 'curve' is simply the histogram, so yes, it's the number of points that have the approximately the same distance. You can display it via the 'Edit > Scalar fields > Show histogram'.
